Vijay Puniani was tired of the Americanized Indian food on Devon Avenue in Chicago, and he realized there was a demand for tasty Indian but in a more fast-casual environment.  Inspired by Chipotle, he has created Chutney Joe's, the Indian answer to fast food, which he's hoping to open up around the country. www.chutneyjoes.com
